Sweet & Smoky Grilled Chicken Skewers
Perfect for weeknight dinners or backyard gatherings, these grilled chicken skewers are packed with flavor and easy to prepare.
Ingredients
- 2 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 2 bell peppers, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into thick rounds
- ¼ cup barbecue sauce
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
Directions
- Preheat your grill to medium-high heat.
- In a large bowl, combine barbecue sauce, olive oil, brown sugar, smoked paprika, garlic powder, salt and pepper.
- Add chicken and toss to coat. Let marinate for at least 30 minutes.
- Thread chicken and vegetables onto skewers, alternating ingredients for color and flavor.
- Grill for 10–12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
- Brush with additional barbecue sauce during the final few minutes of grilling if desired.
- Serve hot with grilled corn, potato salad or your favorite summer sides.
